Did Someone Say Creamy Jalapeño?

The perfect blend of creamy and spicy packed with cilantro-y goodness, this Chuy's copycat creamy jalapeño dip recipe will change your lives and be the star of the show at any party!


One of these days I'll get around to an actual picture. I just get too excited to start shoveling the stuff in my mouth. Oops.

Hellooooo Mexican food - one of the ways to my heart. I will never forget the first time my taste buds experienced the magic that is Chuy’s. And if you don’t like Chuy’s we can’t be friends! Just kidding, I’ll still love you but we won’t be able to bond over the limitless amount of chips, salsa, and creamy jalapeño that I can put down in less than 10 seconds.


Now, I had the pleasure of experiencing Chuy’s once in high school. I thought it was good, but it wasn’t until college that the beautiful, creamy, green, cilantro-y goodness began making regular appearances into my dreams at night.


I’m not sure if it’s the fact that you start to appreciate the finer things in life as you mature and get older, or the fact that I had the best roommates who only encouraged me and fueled my fiery love for the stuff.


I feel that I need to throw this out there as a disclaimer for all the Chuy’s haters in the back! I don’t love Chuy’s for their overall menu and the quality of food….I mean it’s Tex-Mex. What do you expect?


I GO TO CHUY’S FOR THE SALSA AND THE CREAMY JALEPENO. (Okay, and the Happy Hour free queso and delicious margaritas).


My roommates and I were seriously obsessed with this stuff in college…like we had frequent flyer cards, we were there so often.

When I graduated and moved back to East Texas, I left behind the luxury of having a Chuy’s just around the corner (now the closest one is an hour away – it’s actually horrible. I don’t know how I survive.) Since I no longer get to sink my chip in a fresh bowl of green goodness, (also because my husband would never be okay with eating out as much as I did in college LOL) I have learned and adapted a recipe to make this stuff on my own at home, and I gotta say, it’s pretty dang good.


I’m not saying it’s like the real deal by any means; dip on that level only comes from Heaven. But it’s pretty dang close and satisfies my burning desire for this stuff! I’m also convinced it’s the only reason Bryan and I get invited back to parties. Everybody and their chips want in.

Important to note: this recipe can be made in a “healthier” version if you wish. Feel free to substitute the sour cream for plain Greek yogurt. I tried this once and it was still good, but the flavor wasn’t really on point as the real stuff so when I make it, I just splurge on the calories and go for sour cream instead.


This Creamy Jalapeño dip is great for dipping tortilla chips or carrots, drizzled on a salad, or even baked with some chicken! Get creative!


Ingredients:

· 1 (16 ounce) container sour cream

· 2 (1 ounce) packages ranch dressing mix

· ⅓ cup Herdez Tomatillo Verde Mexican Cooking Sauce

· ½ cup fresh cilantro, chopped

· ½ can chopped jalapeños

· 2 cloves garlic, minced (about 2 teaspoons)


Directions:

Add all ingredients to a bowl and use an immersion blender (or add all ingredients to a regular blender) and blend until smooth. Add more of any ingredient, depending on taste and preference. I usually end up adding a smidge more of the ranch powder and load up on the cilantro. Refrigerate for at least 2 hours before serving to let the flavor develop (for best flavor, allow 6 hours).
