Chipotle Sweet Potato Black Bean Chili

Ingredients
• 1 lb lean ground turkey*
• 1 tbsp minced garlic
• 3 medium sweet potatoes, peeled and diced
• 1 medium onion, diced
• 3 medium carrots, peeled and diced
• 3 bell pepper, diced (I use 2 red and 1 green)
• 2 14.5 oz cans of black beans, drained and rinsed
• 2 14.5 oz cans fire roasted diced tomatoes
• 1/2 can of chipotle peppers in adobo sauce, chopped**
• 4 cups broth (I use beef)
• 1.5 tablespoons chili powder
• 1 tbsp cumin
• 1 tbsp paprika
• Salt + pepper to taste
*you can easily make this vegetarian by substituting the ground turkey for kidney beans and using vegetable broth!
**if you have a low tolerance for spice, I would recommend starting with a 1/4 can of the chipotles! 1/2 is perfect if you like medium spice. The first time I made this I used the whole can and it was too spicy for us! But if you like the heat, then go for it!
Instructions
1. Cook ground turkey until no longer pink, add garlic and saute for 1 min longer
2. Add all ingredients to Instant Pot, set valve to sealing position, select pressure cook, and set time for 5 minutes
3. Quick release the pressure, and test potatoes for doneness. Add time if necessary or turn pot to sauté and boil until desired doneness
4. Serve and top with avocado, cheese, cilantro, sour cream, or green onions!
You could also make this on the stove by following the same steps but simmering all ingredients on medium/high heat until potatoes are done.
This is a great healthy and hearty recipe for meal prep and will last in the fridge for 5-7 days!
